Apricot and Date Loaf

I got this recipe from my Godmother many years ago and it has been one of Gj's favourites ever since. I often make double, and when cooled, cut and freeze individual slices for lunch boxes.


Apricot and date loaf


Put in a large bowl

• ½ cup chopped dried dates

• ½ cup chopped dried apricots

• 125g margarine or butter

• ¾ cup of sugar

• 1 teaspoon of bi-carb of soda

• 1 cup of boiling water


Stir until butter dissolved, add

• 1 egg, beaten

• 1 teaspoon vanilla essence

• 2 cups self raising flour


Put in 2 greased, lined loaf pans and bake in moderate oven for 25-30 minutes. (350ºF or 180ºC)
